Ingredients

1 (10.5 oz.) can cream of mushroom soup or cream of celery soup
1/2 cup milk
1 tsp. soy sauce
16-20 oz. thawed frozen green beans or 2 (14.5 oz.) cans green beans, drained or 4 cups fresh cooked cut green beans
1 1/3 cups French fried onions, divided
Salt and pepper, to taste
Optional: 1/4 cup toasted sliced almonds, for extra crunch
Optional: 1/4 cup chopped red bell pepper, for a festive touch

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a 1½-quart oven-safe casserole dish, combine the soup, milk, soy sauce, green beans, and 2/3 cup of the French fried onions. Season with salt and pepper. Optionally, stir in red bell pepper for color and flavor.
  3. Cover the dish loosely with foil and bake for 25 minutes, until the mixture is hot and bubbly.
  4. Remove from oven, stir gently, then sprinkle the remaining 2/3 cup fried onions and toasted almonds (if using) on top.
  5. Bake uncovered for an additional 5 minutes, or until the onions are golden brown and crisp.
  6. Let the casserole rest for a few minutes before serving to allow flavors to meld.
  7. Store leftovers in an oven safe dish for easy reheating. 

Notes

  • Add 1/4 cup toasted sliced almonds to the onion topping for an extra crunch.
  • To add a festive touch: Stir in 1/4 cup chopped red pepper with the soup.
  • If using fresh green beans, you can blanch them if you prefer to keep the vibrant green color and a crispier texture. Boil in water for about 3 minutes. After 3 minutes, immediately submerge in an ice water bath until they are cool to the touch.
  • Make ahead: Prepare the casserole up to the baking step, cover, and refrigerate. Bake when ready to serve, adding an extra 5–10 minutes to ensure it’s heated through.
     
  • Crispier topping: For an even crunchier topping, lightly toast the French fried onions in the oven for 2–3 minutes before adding.
  • Extra flavor: Add a dash of garlic powder or a sprinkle of Parmesan cheese to the mixture before baking.
