Mushroom Spinach Salad Recipe



8 cups fresh spinach
1/2 lb. fresh mushrooms, sliced
4 green onions, chopped
6 bacon strips
2 Tbsp. lemon juice
2 Tbsp. water
1/2 tsp. ground mustard
1/4 tsp. pepper
3 hard cooked eggs, cut into large chunks


  1. Combine the spinach, mushrooms and onions.
  2. Fry bacon and remove from pan.
  3. Add everything else but the eggs to the bacon drippings in the pan and heat through.
  4. Drizzle over the spinach.
  5. Sprinkle the spinach with eggs.
  6. Crumble bacon on top.
