This easy lemon cream cheese bars recipe makes a cool and delicious dessert, with a crunchy crust on the bottom and a delightful lemony center, it is sure to please your family and friends!

1 box lemon cake mix 1/3 cup butter or margarine, softened 1 egg 8 oz. cream cheese, softened 1 cup powdered sugar 1/2 lemon, grated 2 Tbsp. lemon juice 2 eggs 1 tsp. vanilla

Instructions

  1. Preheat oven to 350°.
  2. Mix cake mix, butter and 1 egg.
  3. Press into a 9×13 inch ungreased pan.
  4. Beat cream cheese and sugar together in a bowl.
  5. Stir in lemon peel and juice.
  6. Reserve 1/2 cup of this mixture and chill for later use.
  7. Beat the remaining 2 eggs and vanilla into the cream cheese mix.
  8. Spread over the cake mixture.
  9. Bake for 25-30 minutes.
  10. Cool and spread with reserved cream cheese mixture.
  11. Chill until firm.
