Easy Beef Fajitas Recipe

This easy homemade beef fajitas recipe makes a quick, cheap and easy dinner recipe! It makes a tasty meal your family will love and is a great way to use leftover pot roast.

Ingredients

1 tsp. vegetable oil
1 clove garlic, minced
2 jalapeño peppers, seeded and finely chopped
1 bell pepper (optional)
1 small white onion (optional)
1 lb. leftover roast
1/2 cup lime juice
Salt and pepper, to taste
6 flour tortillas, warmed
Shredded Cheddar or Mexican cheese, optional

Salsa Ingredients

1 Tbsp. fresh cilantro
1 large tomato, chopped
1 small onion, chopped

Instructions

  1. Combine the tomato, onion and cilantro for the salsa. Cover tightly and refrigerate.
  2. If using bell pepper and onion, slice into strips.
  3. Heat oil in a large skillet on high. Sauté garlic, jalapeños, bell pepper and onion for 1 minute.
  4. Add meat and lime juice.
  5. Cook in hot oil for 2-3 minutes, until heated through.
  6. Season with salt and pepper.
  7. Serve in warm tortillas with salsa.
  8. Top with Cheddar or Mexican cheese, if desired.
