This easy homemade vanilla extract recipe is one of our most popular recipes from our Dining On A Dime Cookbook, Volume 1. I absolutely love it and use it all the time. Though the recipe calls for making it in a 1 cup jar, in recent years I have just been adding the vanilla beans directly to a bottle of vodka.

I use this homemade vanilla in all kinds of baking, including in cakes, pajncakes, ice cream and more! It makes a delightful homemade Christmas gift!

Ingredients

2 vanilla beans cut lengthwise (but not in half)
3/4 cup vodka

Instructions

  1. Combine the ingredients in a 1 cup jar.
  2. Set aside and let steep at least 3-4 weeks — the longer the better.
  3. As the vanilla is used, you can add more vodka.

You can get 4-5 large bottles of vanilla out of 2 beans.
