These easy Carrot Cake Truffles turn a simple cake mix and cream cheese frosting into irresistible bite-sized treats dipped in sweet white candy coating. They’re easy to make, fun to decorate and perfect for Easter, spring parties, holidays or anytime you’re craving carrot cake!

Ingredients

1 (15.25 oz.) carrot cake mix
Eggs and oil called for on cake mix
1 (16 oz.) tub cream cheese frosting
12 oz. white candy melting wafers
Additional melting wafers for drizzling, optional

Instructions

  1. Prepare carrot cake according to package directions. Let cool.
  2. Line a baking sheet with parchment paper.
  3. Crumble cake into a mixing bowl. Add cream cheese frosting and mix with a spoon or electric mixer until well combined.
  4. Scoop mixture into balls and place on the prepared baking sheet. Freeze until firm.
  5. Remove from freezer and gently roll or shape the balls until smooth.
  6. Melt white candy wafers according to package directions. Dip each truffle in the melted candy coating, then return to the baking sheet.
  7. If desired, melt additional candy wafers in a contrasting color and drizzle over the truffles.
  8. Chill until firm. Store in an airtight container in the refrigerator.
