Ingredients

1 cup pancake mix
3/4 cup 7-up
2 Tbsp mini chocolate chips (optional)
2 Tbsp. sugar (optional)

Instructions

  1. Preheat oven to 375°F. Line 5 muffin cups with paper liners and spray with cooking spray.
  2. In a medium bowl, stir together the pancake mix and 7-Up just until combined.
  3. Fold in chocolate chips and sugar, if using.
  4. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  5. Bake for 15–20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  6. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack. Serve warm or at room temperature.
 
 

Notes

  • The sugar is optional, but it gives the muffins a sweeter, more homemade flavor.
  • Mini chocolate chips work best because they distribute more evenly throughout the batter.
  • Be careful not to overmix the batter or the muffins may be less tender.
  • Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
