Gluten Free Chocolate Lava Cake Recipe

Ingredients

1 cup gluten free all purpose flour
1/2 tsp. xanthan gum (if not in flour)
3/4 cup sugar
2 Tbsp. cocoa
2 tsp. baking powder
1/4 tsp. salt
1/2 cup dairy free milk (rice or soy)
2 Tbsp. shortening or dairy free butter, melted
1 tsp. vanilla
1/2 cup nuts

Topping

3 Tbsp. cocoa
1/2 cup sugar
1 cup hot water

Instructions

  1. Preheat oven to 350°.
  2. Mix all the ingredients.
  3. Pour into a deep casserole dish buttered with dairy free butter.
  4. For topping, mix cocoa and sugar.
  5. Sprinkle on top of batter.
  6. Pour hot water over the top.
  7. Bake 35-40 minutes.

This has a delicious fudge sauce in the center when baked. Serves 9.
