Ingredients

1 (15.25 oz.) box cake mix, any flavor
1 (8 oz.) tub Cool Whip, thawed
1 egg

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, stir together the cake mix, Cool Whip, and egg until well combined. The dough will be very sticky.
  3. If desired, lightly dust your hands or a cookie scoop with powdered sugar. Scoop about 1½ tablespoons of dough into balls and place about 2 inches apart on the prepared baking sheet.
  4. Bake for 12–15 minutes, or until the cookies are set and the tops are lightly cracked. Avoid overbaking to keep them soft.
  5. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Strawberry, lemon, chocolate, red velvet, funfetti, spice, and devil’s food cake mixes all work well.
  • The dough is naturally sticky. Chilling it for 20–30 minutes can make it easier to handle if needed.
  • Store cookies in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
