Ingredients

About 12 Biscoff cookies
sliced almonds (optional)
3/4 cup brown sugar, packed
1/2 cup butter
1/2 cup chocolate chips

Instructions

  1. Line an 8×8-inch baking pan with parchment paper and spray lightly with cooking spray, or butter the pan.
  2. Arrange the Biscoff cookies in a single layer on the bottom.
  3. If using, sprinkle sliced almonds over the top of the cookie layer.
  4. In a saucepan over medium heat, bring the butter and brown sugar to a boil. Continue boiling for 7 minutes, stirring occasionally.
  5. Pour the hot mixture evenly over the cookies in the pan.
  6. Sprinkle the chocolate chips over the top and let them sit for a few minutes to melt.
  7. Spread the melted chocolate smoothly over the surface.
  8. Let the toffee cool completely, then break into pieces.
