Chocolate Oatmeal Cake Recipe

Ingredients

1 cup oatmeal
1 1/2 cups hot water
3/4 cup white sugar
3/4 cup brown sugar
1/3 cup vegetable oil
4 egg whites
1 1/2 cups all purpose flour
1/2 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
1 tsp. vanilla

Instructions

  1. Preheat oven to 350°.
  2. Pour water into oatmeal. Let it thicken about 5 minutes.
  3. Mix sugars and oil in a bowl.
  4. Beat egg whites in another bowl.
  5. Pour into sugar mixture.
  6. Mix well.
  7. Add flour, cocoa, baking soda and salt and blend.
  8. Add oatmeal and vanilla and mix well.
  9. Pour into a greased 9×13 inch pan and bake 30-35 minutes. Serves 18.
