1 1/2 cups dry elbow macaroni
3 Tbsp. butter
3 Tbsp. all-purpose flour
2 cups milk, not skim
1/2 tsp. salt
1/2 tsp. pepper
2 cups cheese, shredded (Cheddar, Swiss)
parsley, chopped (optional)

Instructions

  1. Preheat oven to 350°.
  2. Bring a pot of water to a boil.
  3. Add a generous sprinkling of salt and the pasta to the water.
  4. While the pasta cooks, melt the butter in a skillet or pot large enough to hold the pasta when it’s done.
  5. Add the flour to the butter and stir over medium heat until the mixture is lightly browned, about 1-2 minutes.
  6. Add the milk and whisk to remove any lumps.
  7. Add salt and pepper.
  8. Cook over medium-high heat until the mixture thickens and starts to bubble, about 6 minutes.
  9. Stir in the cheese and whisk until smooth and melted.
  10. Turn off the heat.
  11. When the pasta is almost done, but still firm, remove from heat and drain.
  12. Stir the pasta into the sauce.
  13. Bake in a greased 2 quart dish (or 8×8 inch baking pan) for 20-25 minutes, until browned and bubbly.
  14. Sprinkle with chopped or dried parsley, if desired.

Notes

If you want your baked macaroni and cheese super creamy, you can skip baking it and just put it under the broiler to brown the top. (Keep a close eye on it.) Then serve.

If you like, you can sprinkle some grated parmesan cheese over the top before baking. YUM!
