Easy Chocolate Truffles

Ingredients

1 Tbsp. sugar
1/4 cup whipping cream
2 Tbsp. butter
1 cup chocolate chips
2 Tbsp. desired liquor (optional) - (brandy, amaretto, kahlua, rum etc.) or any flavoring (orange, mint, raspberry, coffee)
1/2 cup nuts, finely chopped
1/2 cup cocoa powder

Instructions

  1. Combine the sugar, whipping cream and butter in a 1 quart saucepan.
  2. Cook and stir until butter is melted and mixture is very hot but not burned.
  3. Remove from heat.
  4. Stir in chocolate chips until melted and well blended.
  5. Stir in  liquor, if desired. (If desired, halve the batch at this point and stir 1 Tbsp. of 2 different liquors into each portion.)
  6. Cover and refrigerate for about 1 hour, stirring occasionally, until the mixture is completely cool and thick enough to scoop.
  7. Drop mixture from a rounded teaspoon onto a baking sheet lined with waxed paper or a silicone baking mat.
  8. Chill 30 minutes or until firm.
  9. Roll into balls, then coat in chopped nuts or cocoa powder.
  10. Store in a cool, dry place or refrigerate until ready to serve.

For an extra-special treat, dip the finished truffles in melted white, milk, or dark chocolate and place them on waxed paper until the coating hardens.
 

Soft and Creamy Texture

These homemade truffles have a softer, creamier center than many store-bought varieties. If you prefer a firmer shell, coat them in melted chocolate candy coating and allow them to set completely before serving.
