California Veggie Bake Recipe

This California veggie bake is a colorful side dish that is great for a chilly fall evening. It uses Velveeta Cheese. I didn’t used to buy Velveeta as much as I bought cheddar cheese. One day I compared prices and the Velveeta was the same price as cheddar, so I buy Velveeta more often now.

Ingredients

2 (16 oz.) packages California Blend frozen vegetables
8 oz. Velveeta (cubed)
6 Tbsp. butter or margarine, melted and divided
1/2 cup butter-flavored crackers, crushed

Instructions

  1. Preheat oven to 325°.
  2. Prepare vegetables according to the package directions and drain.
  3. Place half of the vegetables into an 11x7x2 ungreased baking dish.
  4. Melt cheese and 4 Tbsp. butter in a saucepan and pour half over the vegetables.
  5. Layer with the rest of the veggies and cover with the rest of the cheese mixture.
  6. Mix the crackers and the rest of the butter and sprinkle over the vegetables.
  7. Bake uncovered for 20-25 minutes until golden.
