Ingredients

1 (15.25 oz.) lemon cake mix
1/3 cup butter softened
1/4 cup shortening
1 egg
1 can lemon frosting or Buttercream Frosting with 1 tsp. Lemon extract (optional)

Instructions

  1. Preheat oven to 375°.
  2. In a large bowl, beat cake mix, butter, shortening and egg until well combined.
  3. Using a cookie scoop, scoop onto a greased cookie sheet or lined with parchment paper.
  4. Bake for 9-11 minutes. Let cool completely.
  5. Frost with lemon frosting or buttercream frosting with 1 tsp. Lemon extract stirred in.
