These Cream Cheese Lemon Bars are a quick and easy dessert full of bright lemon flavor! Made with a simple lemon cake mix crust and cream cheese, they come together in just a few minutes with just a few ingredients.

Ingredients

1 (15.25 oz.) lemon cake mix
1 egg
1/2 cup vegetable oil
1 (8 oz.) package cream cheese
1/3 cup white sugar
1 Tbsp. lemon juice

Instructions

  1. Preheat oven to 350°.
  2. Mix cake mix, egg and oil; mix until well blended. Mixture will be slightly dry.
  3. Reserve one cup for the topping, and pat the rest into an ungreased 9×13 inch pan.
  4. Bake for 15 minutes. Set aside to cool.
  5. Meanwhile, in a medium bowl, beat the cream cheese with the sugar and lemon juice until smooth.
  6. Spread the mixture evenly over the baked crust.
  7. Crumble the reserved cake mix mixture over the top.
  8. Bake for an additional 15 minutes, or until filling is set and the topping is lightly toasted.
  9. Cool before cutting into bars. Refrigerate leftovers.
