Ingredients

1 egg
1/2 cup eggnog
1/4 cup vegetable oil
1/2 cup sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 cups all-purpose flour

Preheat oven to 400°.
Mix all the ingredients in a bowl. The batter will be slightly lumpy.
Place the batter 2/3 full into greased muffin tins or muffin tins lined with papers.
Bake for 15-20 minutes.
