1 pkg. or 1 Tbsp. yeast 1/4 cup water, lukewarm 3/4 cup milk, scalded 4-5 cups flour 3/4 cup sugar 2 eggs, well beaten 2 tsp. lemon rind (optional) 1/2 cup shortening, melted 3/4 tsp. nutmeg 1/2 tsp. salt vegetable oil for frying

Instructions

  1. Dissolve yeast in water.
  2. Add cooled milk.
  3. Add 1/2 cup flour and 2 tablespoons sugar.
  4. Beat until smooth.
  5. Let rise 1/2 hour.
  6. Add eggs, lemon rind, shortening, flour, sugar, nutmeg and salt.
  7. Beat 4 or 5 minutes with mixer.
  8. Gently knead with a small amount of flour .
  9. Let rise 1 hour.
  10. Roll 1/2 inch thick.
  11. Cut with a biscuit cutter.
  12. Let rise 1 hour.
  13. Fry in hot vegetable oil until golden brown on each side.
  14. Frost with chocolate frosting, or coat with powdered sugar or cinnamon and sugar. Makes 2 dozen.
