Ingredients

1/2 cup butter flavored shortening or dairy free butter
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
2 tsp. vanilla
1/2 tsp. baking soda
1 tsp. hot water
1/4 tsp. salt
1 1/2 cups gluten free all purpose flour
1 tsp. xanthan gum (if not already in the flour)
1 cup dairy free semi-sweet chocolate chips
1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the shortening, sugar, and brown sugar until until smooth.
  3. Beat in the egg until fully incorporated. Stir in the vanilla extract.
  4. In a small bowl, dissolve the baking soda in the hot water. Add to the dough along with the salt and mix well.
  5. Stir in the gluten-free flour and xanthan gum (if using) until combined. Fold in the chocolate chips and walnuts (if desired).
  6. Drop dough by rounded tablespoonfuls onto ungreased baking sheets, spacing about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are browned.
  8. Allow cookies to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes

  • For thicker cookies, chill dough 30 minutes before baking.
  • Do not overbake — gluten-free cookies firm up as they cool.
  • Use a gluten-free flour blend that contains rice flour for best texture.
