Sourdough Discard Coffee Cake Recipe

Ingredients

2 cups all-purpose flour
2 tsp. baking powder
1 tsp. salt
1 cup sugar
2 rounded Tbsp. shortening
1/4 cup milk
1 cup sourdough starter
2 eggs
3 tsp. vanilla

Coffee Cake Topping

2 Tbsp. butter
1/2 tsp cinnamon
3 Tbsp. brown sugar
3/4 cup all-purpose flour

Instructions

  1. Preheat oven to 350°.
  2. In a bowl, mix flour, baking powder, salt, sugar and shortening.
  3. Add milk, sourdough discard, eggs and vanilla to the remainder of the flour mixture. Mix until smooth.
  4. Pour the batter into a 9×9 inch buttered pan.
  5. Combine all of the topping ingredients and mix well.
  6. Sprinkle the topping over the top.
  7. Bake 45 minutes, until a knife inserted into the center comes out clean.
