Pumpkin Whoopie Pies are a melt-in-your-mouth treat everyone will rave about! With their soft, spiced pumpkin cookies and rich cream cheese filling, they’re irresistibly delicious and always a hit. Perfect for parties, potlucks, or holiday gatherings, these little desserts disappear fast!

Ingredients

1 (15 oz.) spice cake mix*
1 (15 oz.) can pumpkin puree
Cream cheese frosting (store-bought or homemade)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a cookie sheet or line with parchment paper.
  2. In a large bowl, stir together the cake mix and pumpkin puree until well combined.
  3. Drop spoonfuls of batter (about 2 tablespoons each) onto the prepared cookie sheet, leaving space between them.
  4. Bake for 10–15 minutes, or until cookies are set and a toothpick comes out clean.
  5. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  6. Spread cream cheese frosting on the flat side of one cookie. Top with another cookie to make a sandwich.
  7. Repeat with remaining cookies. Store in the refrigerator until ready to serve.

Notes

  • *If your cake mix is only 13.5 oz, add ¼ cup flour to the batter.
  • For smaller whoopie pies, use a tablespoon of batter per cookie.
  • These taste even better the next day once the flavors meld!
