Pumpkin Cake Mix Cookies

Ingredients

1 (15 oz.) can pumpkin purée
1 box spice cake mix

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or lightly grease.
  2. In a large bowl, stir together the pumpkin and cake mix until fully combined.
  3. Drop dough by rounded tablespoonfuls onto prepared baking sheets, spacing about 2 inches apart.
  4. Bake 13–15 minutes, or until cookies are set and edges are lightly golden.
  5. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack (so they don’t get soggy).
  6. Frost with vanilla or cream cheese frosting, if desired.

Notes

Flavor Variations

  • Snickerdoodle Pumpkin Cookies – Mix ½ cup sugar with 1 teaspoon cinnamon. Sprinkle on top before baking.
  • Chocolate Pumpkin Cookies – Substitute a chocolate cake mix for the spice mix.
  • Chocolate Chip Pumpkin Cookies – Add ½–1 cup chocolate chips.
  • Double Chocolate Pumpkin Cookies – Use chocolate cake mix and add ½–1 cup chocolate chips.
  • Pumpkin Raisin Cookies – Add ½–1 cup raisins.
