Ingredients

2 eggs
1 (15 oz.) can pumpkin puree
1 box spice cake mix
1 tsp. pumpkin pie spice (optional, for extra flavor)

Instructions

  1. Preheat oven to 350°F. Grease and lightly flour a 9×5-inch loaf pan.
  2. In a large bowl, mix the eggs and pumpkin puree until smooth.
  3. Add the cake mix and pumpkin pie spice (if using). Mix until just combined. Do not overmix.
  4. Pour the batter into the prepared pan and spread evenly.
  5. Bake for about 55 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the bread cool before slicing. If the bread does not come out if the pan easily, gently pull it away from the edges of the loaf pan with a small spatula or cake turner.

Notes

This bread also makes great muffins! Simply divide the batter into a muffin tin and bake at 350°F for 18–22 minutes.
