Ingredients

3 cups ruby chocolate chips
2 Tbsp. whipping cream
2 Tbsp. butter.
1/4 cup cocoa powder or powdered freeze-dried fruit (for coating)

Instructions

  1. In a microwave-safe bowl, combine the ruby chocolate, whipping cream, and butter.
  2. Microwave in 30-second intervals, stirring well between each round, until completely melted and smooth.
  3. Refrigerate for 1–2 hours, or until the mixture is firm enough to scoop and roll.
  4. Scoop out small portions and roll into balls using your hands.
  5. Roll each truffle in cocoa powder or powdered freeze-dried fruit until coated.
  6. Store truffles in an airtight container in the refrigerator until ready to serve.

Notes

  • For easier rolling, lightly dust your hands with cocoa powder.
  • Try coatings like crushed freeze-dried raspberries, strawberries, or powdered sugar for different flavors.
