Ingredients

3/4 cup (1 1/2 sticks) butter
3 cups sugar
2/3 cup evaporated milk
2 cups white chocolate chips
1 (7 oz.) jar marshmallow fluff
1 tsp. vanilla

Instructions

  1. Line an 8×8-inch baking dish with parchment paper, leaving a little overhang for easy removal.
  2. In a large, heavy-bottomed saucepan, melt the butter over medium-high heat. Continue cooking, stirring occasionally, until the butter turns a rich golden brown and develops a nutty, toasty aroma. Watch carefully—it can go from perfect to burnt quickly!
  3. Reduce the heat to medium, then stir in the sugar and evaporated milk.
  4. Bring the mixture to a boil. Cook until it reaches 234°F–238°F on a candy thermometer (about 10 minutes).
  5. Remove from heat and stir in the white chocolate chips until mostly combined.
  6. Fold in the marshmallow fluff and vanilla extract until smooth and creamy.
  7. Pour the fudge into the prepared pan, smoothing the top with a spatula. Let it cool at room temperature for at least 2 hours, or until firm.
  8. Lift out using the parchment overhang, cut into squares, and serve.

Notes

  1. For extra flavor, sprinkle a pinch of sea salt on top before the fudge sets.
