Ingredients

1 (15 oz.) box spice cake mix
3 large eggs
1/2 cup sour cream or plain Greek yogurt
1 (20 oz.) can apple pie filling, cut into small pieces
1/4 cup oil
1 tsp. cinnamon (optional)
1 tsp. nutmeg (optional)

Optional Glaze (or use our glaze recipe here):

1 cup powdered sugar
1 Tbsp. butter, melted
4 Tbsp. milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare your pan:
    Bread: Grease a 9×5-inch loaf pan generously.
    Muffins: Line a muffin pan with paper liners and lightly spray with cooking spray.
  3. In a large bowl, mix together the cake mix, eggs, sour cream (or yogurt), apple pie filling, oil, and spices (if using) until well combined.
  4. Bake:
    For Bread: Pour batter into the loaf pan and bake for 60–70 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly before the center is baked through, loosely cover with foil for the remainder of baking.
     
    Muffins: Divide batter evenly among muffin cups and bake for 20–30 minutes, until a toothpick comes out clean.
  5. Leave the bread in the pan for at least 20–30 minutes before removing. Because it’s very moist, cooling longer helps it hold together.
  6. Muffins can be removed from the pan after about 10 minutes.
  7. Glaze (optional): In a small bowl, whisk together powdered sugar, melted butter, and milk until smooth. Drizzle over cooled bread or muffins (or use our glaze recipe here).

These freeze well—wrap cooled bread slices or muffins individually and store in the freezer for quick breakfasts or snacks.
