Ingredients

1 lb. bacon, diced
1 onion, chopped
6 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups Cheddar cheese, shredded
1 1/2 cups cottage cheese
1 1/4 cups Swiss cheese, shredded

Instructions

  1. Preheat oven to 350°F. Grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, cook the bacon and onion until the bacon is very crisp.* Drain well.
  3. In a large bowl, combine the eggs, hash browns, Cheddar cheese, cottage cheese, and Swiss cheese.
  4. Stir in the bacon and onion mixture.
  5. Spread evenly in the prepared baking dish.
  6. Bake uncovered for 35–40 minutes, or until a knife inserted in the center comes out clean.
  7. Let stand for 10 minutes before cutting and serving.

Notes

  • *Cook the bacon until very crisp. Soft bacon will release grease and make the casserole soggy.
  • This casserole can be assembled the night before and refrigerated. Bake as directed in the morning, adding 5–10 minutes to the cooking time if needed.
