
Green St. Patrick’s Day Tips
I am going to give you some “green” dishes. No, not “earth friendly green” but “wearing of the green” or, in this case, “eating of the green”. Pick some of these foods for your special St. Patrick’s Day meal.
- Green Fruits: kiwi, green grapes, honeydew, green apples
- Green Veggies: Broccoli, green peppers, Brussels sprouts, green beans, peas, asparagus
- Green Meats: I advise you to stay away from any green meats unless you want to spend some time in the hospital HA! HA! But you can serve corned beef (fresh, of course

Easy St. Patrick’s Day Recipes
St. Patrick’s Day Cookies
For a fast St. Patrick’s Day treat, dip Oreo cookies into melted white chocolate or almond bark then sprinkle with green sprinkles. All you need to do is to hold and dip half way in the melted chocolate. You can now get Oreos with the filling colored for different holidays and these would be fun to use.
Don’t forget to do this for any holiday. Just change the color of the sprinkles and, of course, you could use different types of cookies.
Lime Fluff
1 pkg. unsweetened lime soft drink mix
1 can sweetened condensed milk
1 (8 oz.) container whipped topping
1 chocolate cookie or graham cracker crust
Mix drink mix and milk. Fold in whipped topping and place into crust. Cover and chill. You can make this without the crust and try different flavors of soft drink mix. You could use red for Valentine’s Day, orange for Halloween and so on.
Cool Gelatin Salad
1 (3 oz.) pkg. lemon gelatin
1 (3 oz.) pkg. lime gelatin
1 cup boiling water
1 can sweetened condensed milk
1 package large curd cottage cheese
1 cup mayonnaise
1 (15 oz.) can crushed pineapple in heavy syrup
Dissolve gelatin in boiling water. Pour in remaining ingredients and chill.

Both of these recipes sound good. I will try both. I wanted to tell you, Jill, that I got some Valentine candy for 90% off today. Chocolate and white chocolate, and do you know hardly anyone but me was interested? Just because they were shaped in hearts etc., people weren’t interested. I saw people buying candy, but they didn’t want the greatly reduced ones just because they were Valentine shapes. Go figure. People can be so foolish. Chocolate tastes like chocolate no matter what the shape.
I know Bea. Thanks for reminding us too to keep an eye out for this stuff long after the holiday because you can get some even better deals then.
You’re welcome Jill. You know what also cracks me up? They have Easter chocolate out already. It’s been out AWHILE now too, so come Easter that candy isn’t going to be any fresher than the Valentine candy is now. Easter is in April, and since Lent starts today, we have 40 days for that candy to be on the shelf before then.
That is true Bea. What most people don’t realize too is that candy isn’t like other things and has a super long shelf life – we’re talking months and that isn’t even with freezing or anything. There are many things like that that we worry to much about. For example I bought some cheese this week and the expiration date on it is Sept. It can sit in my fridge until then. I don’t know why so many people worry about freezing it (which you can do but it isn’t quite as good in some cases). That is almost 6 months I have to eat it in.
I have seen employees filling boxes with candy left from one celebration display walking into the back room and walking back out with the same box of candy and placing it on shelves with the next celebration candy.
Same candy just new full price or higher tags.
I talked to some that I knew and they were told to make it look like they were getting new candy from the back room.
So stores are not always selling new stock they are simply making money on old stock.
Thank you so much for posting the “Cool Gelatin Salad” recipe. My mother used to make it all the time, especially for pot-lucks. I always enjoyed that salad and had recently been trying to remember how she made it! One addition – my mother added walnuts to the salad. Thanks again!
Five Minute Key-Lime Pie (I think this recipe is from Keebler)
Dissolve one small pkg of lime jello in 1/3 cup hot water. Mix together jello, 8 oz. cool whip, and two 6-oz containers of key lime pie yogurt. Put in a graham cracker crust. This is a delicious green dessert. And quick.
Use white chocolate and dye it green.
I enjoy giving my kids small treat bags filled with candy on Valentine’s Day and St. Patrick’s Day. Here’s what I do to keep the cost low: After Christmas I buy Hershey Kisses and M&M’s in the Christmas colors. I separate them into red, green and silver. For Valentine’s Day I put in red M&M’s and red and silver Kisses. For St. Patrick’s Day I put in green and silver and also a bag of gold coins. It’s very reasonably priced and my kids look forward to it every year!
