Meatloaf, Strawberries Over Cream

It's almost summer and we are going to be thinking of light and easy desserts. One easy thing to use to dress up so many desserts is whipped topping. Here are some different ways to bring plain old whipped topping to a whole new level.


  • I prefer the taste of the name brand whipped topping, but the name brand is often much more expensive. I have found that if I add a teaspoon of vanilla to a less expensive topping, the vanilla gives it a richer and deeper flavor.

  • Try adding a couple of tablespoons of Nestle Quick (chocolate or strawberry) to whipped topping. This extra touch with the whipped topping makes plain chocolate pie something special and gives regular strawberry shortcake a whole new twist.

  • You can also try adding 2 tablespoons of flavored gelatin to get an almost endless choice of flavors. Blueberry, lemon, lime, orange, grape and cherry flavors are all great choices to spice up any variety of desserts.

  • For any of these flavor enhancements, simply adjust the amount if you want a stronger or milder flavor.





Today's Menu

Sometimes, especially if we have been watching a lot of cooking shows on TV, we forget that every meal doesn't have to be a gourmet meal. Today's menu is one of those simple, back to the basics menus that is sure to please!

Meatloaf
Mashed potatoes
Peas
Tossed salad
Strawberries over Cream*

This is a nice light dessert. It is not too sweet. Don't forget to add some vanilla to the whipped topping for more body and flavor.



*Strawberries over Cream

1 Envelope (1 Tbsp.) unflavored gelatin*
3/4 cup cold water
1 cup sour cream
1 small container whipped topping
2 pints Strawberries, sliced

Pour water into a sauce pan, sprinkle with gelatin and dissolve over low heat. Stir in sour cream. Remove from burner and cool. When slightly cool, add whipped topping. Pour into mold, pan or bowl and chill. Serve topped with sliced strawberries.

*Don't be afraid of unflavored gelatin. You can find it at the store by the Jello and is just as easy to use.
