These look yummy! Do you think this cookie would work well with an ice cream filling for ice cream sandwiches?

I was reading an Amish book and it had some recipes along with the stories, and there was one I really thought you’d like Jill and Tawra. It is a very simple recipe for Whoopie Pies. You take a boxed cake mix and add ingredients as stated on box, PLUS an additional cup of flour, and mix. Drop by spoonfuls onto baking sheet. Bake 10-12 minutes. When cooled spread any flavor of canned frosting between 2 of the cookies. Real simple. You can use any flavor of cake mix and frosting.

The filling says to cream butter and sugar but I don’t see butter in the ingredient list, am I missing something here?

My husband is from PA, his grandmother is in Lancaster County. It’s not Christmas if we don’t have Whoopie Pies. His mother makes them ahead of time and freezes them. They freeze well, but will stick a little to your fingers, which is fine with him, more for later ;)
