
Delicious Mint Chocolate Cookies/Whoopie Pies
2/3 cup margarine, softened
1/2 cup sugar
1/2 cup brown sugar, packed
1 egg
1/4 cup milk
2 cups flour
3/4 cup baking cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Filling:
2-3/4 cups powder sugar
1/4 cup half and half cream
1/4 tsp peppermint extract
1/4 tsp. salt
Green food coloring
Cream margarine, sugar then add milk and eggs. Combine dry ingredients and add to creamed mixture and mix well. Cover and chill for 2 hours until firm. Roll dough on floured surface about 1/8 inch thick Cut with 1-1/2 inch cookie cutter and place 1 inch apart on greased cookie sheet. Bake at 375° for 5-6 minutes or until edges are lightly brown. Cool on racks. Combine filling and spread on half of the cookies, then top with the other halves. Makes about 7 dozen.

I was reading an Amish book and it had some recipes along with the stories, and there was one I really thought you’d like Jill and Tawra. It is a very simple recipe for Whoopie Pies. You take a boxed cake mix and add ingredients as stated on box, PLUS an additional cup of flour, and mix. Drop by spoonfuls onto baking sheet. Bake 10-12 minutes. When cooled spread any flavor of canned frosting between 2 of the cookies. Real simple. You can use any flavor of cake mix and frosting.
The filling says to cream butter and sugar but I don’t see butter in the ingredient list, am I missing something here?
Sorry PJ, my mistake. I meant to cream the margarine and said butter instead. I fixed it. Thanks for letting us know.
My husband is from PA, his grandmother is in Lancaster County. It’s not Christmas if we don’t have Whoopie Pies. His mother makes them ahead of time and freezes them. They freeze well, but will stick a little to your fingers, which is fine with him, more for later
