<p><strong>Here&#8217;s a quick and easy main dish recipe you can make to use some of your leftover holiday turkey.</strong> It is so fast you make it in less time than it takes to boil the pasta.</p>
<h2><strong>*Ranch Turkey Pasta Dinner</strong></h2>
<p>2 1/2 cups uncooked medium tube pasta (or any other type of pasta or noodle)<br /> 6-8 Tbsp. butter or margarine<br /> 1 envelope ranch salad dressing mix<br /> 1 cup frozen peas and carrots, thawed<br /> 3 cups turkey, cooked and cubed</p>
<p>Cook the pasta according to the directions. While the pasta is cooking, melt the butter in a skillet and add salad dressing mix. Add peas and carrots. Cook for 2-3 minutes. Drain the pasta and add it and the turkey to skillet. Makes 4 servings.</p>

<h2><strong>*Cheese Toast</strong></h2>
<p>Spread bread with butter. Sprinkle with garlic powder and Parmesan cheese. Broil until golden. Watch carefully as it goes from just right to incinerated very quickly.</p>

<h2><strong>*Coconut Raisin Rice Pudding</strong></h2>
<p>This recipe is a great way to use extra rice.</p>
<p>1/4 cup butter or margarine, melted<br />3 eggs<br />3 cups milk<br />1 cup sugar<br />2 tsp. vanilla <br />3/4 tsp. cinnamon or nutmeg<br />1/2 tsp.salt<br />2 1/2 cups cooked rice<br />3/4 cup raisins<br />3/4 cup flaked coconut</p>
<p>Place butter in a 13x9x2 baking dish. Set aside. Combine the eggs, milk, sugar, vanilla, cinnamon or nutmeg and salt. Stir in the rice and raisins. Pour into the baking dish. Bake, uncovered, at 325 degrees for 30 minutes. Then sprinkle with coconut. Bake 10-15 minutes longer. Refrigerate leftovers.</p>
<p><strong>Tip: You can substitute brown sugar for the white sugar,</strong> replace 1 cup of milk with coconut milk, use dried cranberries or top with mango, raspberries, bananas or any fruit you like.</p>

<li><span style="font-size: medium;"><strong>If you need to stretch your croutons</strong> or for something slightly different, try crushing them a bit. Cracker crumbs can look pretty and taste good too.</span></li>
<li><span style="font-size: medium;"><strong>When cutting bar cookies or desserts you can use a pizza cutter but what I like the best is to use my pastry cutter.</strong> Some people call it a bench knife. It&#8217;s that flat square metal tool. Just press it down on to the cookies to cut. Don&#8217;t pull or drag it like you do a knife. Just go up and down.</span></li>
<li><span style="font-size: medium;"><strong>Try something different for grilled cheese sandwiches.</strong> Use chicken or ham for meats or try Swiss or Colby cheese. If you usually eat your grilled cheese with ketchup, try spreading it with mayonnaise before you grill it instead.</span></li>

<p><span style="font-size: medium;">Spread bread with dressing (in place of the normal butter). Place dressing side down on a pan that you have sprayed with non stick spray. Layer with basil leaves, cheese, tomato and 2nd slice of bread. Grill on both sides.</span></p>

<p><span style="font-size: large;"><strong>Yogurt Dessert</strong></span></p>
<p><span style="font-size: medium;">5 cups cornflakes, crushed</span><br /><span style="font-size: medium;">1 cup pecans or nuts, finely chopped</span><br /><span style="font-size: medium;">4 Tbsp. margarine or butter, melted</span><br /><span style="font-size: medium;">6 Tbsp. maple syrup</span><br /><span style="font-size: medium;">16 oz. plain yogurt</span><br /><span style="font-size: medium;">16 oz. vanilla yogurt</span><br /><span style="font-size: medium;">2 &#8211; 3 cups fresh fruit</span></p>
<p><span style="font-size: medium;">In a 9&#215;13 pan, mix cornflakes, nuts, margarine and syrup. Press flat. Bake at 350 degrees for 10 minutes. Mix yogurts together and spread on cooled crust. Top with fruit. You may halve this recipe and bake in an 8&#215;8 pan. Serve immediately.</span></p>

<p>Mix first three ingredients together in a casserole dish and bake at 350° for 20 minutes until warmed. Top with cheese and bake an additional 5 minutes or until cheese melts. Serves 4.</p>
<p>You may add 1 package of any vegetable.</p>

<p>3-4 cups mashed potatoes<br /> 4 oz. cream cheese, softened in microwave<br /> 1 clove of garlic or 1 tsp. garlic powder, to taste<br /> 1 cup Mexican cheese blend, shredded</p>
<p>Mix potatoes, cream cheese and garlic and place in a 1 quart greased baking dish. Sprinkle with cheese and place under broiler for 3-4 minutes until cheese is melted.</p>

<p>1 package yellow cake mix<br /> 3 Tbsp. margarine, melted<br /> 1 1/2 cups eggnog<br /> 2 eggs<br /> 1/8 tsp. nutmeg</p>
<p>Beat everything together until smooth. Pour into prepared pan and bake at 350° for 40-50 minutes, until toothpick inserted into the center comes out clean. Cool on wire rack.</p>

<p><span style="font-size: small;"><strong>David&#8217;s Favorite Dip</strong></span></p>
<p>1 jar Kraft Old English cheese spread<br /> 1 (8 oz.) pkg. cream cheese, softened<br /> 1/4 cup nuts, chopped</p>
<p>Mix ingredients. Roll into a ball. Wrap in plastic wrap. Most of the time we just mix it and serve in a bowl without wrapping it. Serve with chips.</p>

<p><span style="font-size: small;"><strong>Blue Cheese Dip</strong></span> (Jill&#8217;s favorite)</p>
<p>1 stick butter (not margarine), softened<br /> 1 (8 oz.) package cream cheese, softened<br /> 2 oz. crumbled blue cheese<br /> 1/2 small package (2-3 Tbsp.) slivered almonds, toasted*<br /> 2 Tbsp. chopped ripe olives</p>
<p>Mix everything. Chill. If you want to make a ball or log then save out the almonds and roll it in them.</p>
<p>*To toast your almonds lay them on foil or a pan and heat in a 400° oven until brown. Watch carefully.</p>
<p>Serve with chips.</p>

<p><strong>This dip tastes like some very expensive ones that you can buy pre-made.</strong> Be sure to use dried herbs and not powdered. Dried herbs are the bigger flakes that haven&#8217;t been ground fine.</p>

<p>1 clove garlic, crushed or garlic powder<br /> 2 (8 oz.) pkgs. cream cheese, softened<br /> 1 cup (2 sticks) butter or margarine<br /> 1 tsp. dried oregano<br /> 1/4 tsp. each of dried basil, dill weed, marjoram, thyme,<br />            pepper</p>
<p>Blend all ingredients together. This will keep in the refrigerator for 1 week or in the freezer for 3 months.</p>

<p>Mix and serve with fresh fruit. You can use this as a fruit salad dressing. too. If used as a dressing, then you can use canned fruit and garnish with coconut and/or toasted chopped almonds or nuts.</p>

<li><strong>I have used almost every method known to man to find an easy way to cut fudge.</strong> After 40 plus years of fudge making ( I started when I was in the womb, because I&#8217;m not that old I&#8217;m sure <img src='http://www.livingonadime.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' />  I had almost given up until last year when I made a discovery that changed my life. I used a square metal scraper, sometimes called a dough cutter, with a rocking motion to cut my fudge. It works so well that I can hardly wait to make my fudge this year so I can cut it.</li>
<li><strong>You don&#8217;t always have to put fudge in pans.</strong> When slightly cooled, pour onto plastic wrap that has been sprayed with Pam and roll into logs. Chill and then slice.</li>
<li><strong>To add an elegant twist to homemade candy and cookies that you give as gifts,</strong> place them in cellophane bags and tie with a pretty ribbon. The fact that no wrapping is needed is an added bonus. You can place several bags of different things into a decorated box or basket for a larger gift.</li>

<p><strong><span style="font-size: medium;">*Cinnamon Apples</span></strong></p>
<p>4 apples, peeled and cored<br />
Water<br />
1/4 &#8211; 1/2 cup cinnamon candies</p>
<p>Place apples and candies in sauce pan and add enough water to cover. Cook until apples become tender, about 15 to 20 minutes. Stir every once in awhile to help the candies dissolve. Apples will be a beautiful bright red.</p>
<p>&nbsp;</p>
<p><strong>(This is a great way to use your leftover turkey.</strong> You can use chicken too. If you don&#8217;t have much time, use frozen veggies. Just cut down on the cooking time and, if not using frozen potatoes, cook them first.)</p>
<p><strong><span style="font-size: medium;">*Back to Basics Casserole</span></strong></p>
<p>3 cups turkey or chicken, cubed and cooked<br />
3 medium carrots, cut into bite sized pieces<br />
3 celery stalks, cut into bite sized pieces<br />
3 red potatoes, cut into bite sized pieces<br />
1 (10-3/4 oz.) can cream of chicken soup<br />
1/2 &#8211; 3/4 soup can of water<br />
Salt and pepper to taste</p>
<p>Place the turkey in a well greased 2 quart baking dish. Layer the rest of the veggies on top of that. Mix soup, water, salt and pepper. Then pour over everything. Bake at 350° for 60 to 75 minutes until tender. If using frozen veggies, cut time in half. Makes 4-5 servings.</p>
<p>&nbsp;</p>
<p><strong>Even though this is a pretty common fudge, it is still my all time favorite.</strong> I could do without every other candy or cookie at Christmas, if necessary, but please, please don&#8217;t take away my fudge! One of the highlights of my life was the first year after my kids had left home and I made fudge. I got to lick the whole pan by myself! I thought I had died and gone to heaven! You see, empty nesters, there is a bright side to being home alone!</p>

<p><strong><span style="font-size: medium;">Millionaire Fudge</span></strong></p>
<p>4 1/2 cups sugar<br />
1 (12 oz.) can evaporated milk<br />
1 Tbsp. butter</p>
<p>Boil 5 minutes, stirring constantly.</p>
<p><strong><span style="font-size: small;">Add:</span></strong></p>
<p>2 1/2 large (8 oz. each) Hershey&#8217;s candy bars, slightly crushed*<br />
1 (12 oz.) bag of semi-sweet chocolate chips<br />
1 (7 oz.) jar marshmallow cream<br />
1 tsp. vanilla<br />
Nuts, chopped</p>
<p>Beat until well blended. Pour into 2 greased 9&#215;13 pans for thicker pieces and for thinner pieces add another 8&#215;8 pan. Before you start, be sure to have your pans all ready, your candy bars crushed, nuts chopped and every package opened and ready to dump in as soon as it is done boiling.</p>
<p>*I use milk chocolate candy bars, but my son-in-law and grandson love dark chocolate so I sometimes use dark chocolate and milk chocolate together. You can even substitute milk chocolate for the semi sweet chips. You can easily tailor it to your own personal preferences.</p>
<p>Last year after Halloween, my daughter found a good deal on Hershey&#8217;s Kisses for 50 cents a bag, so I used those in place of my candy bars. That is why I say stock up after Halloween!</p>
<p>&nbsp;</p>
<p><strong><span style="font-size: medium;">Speedy Fudge</span></strong></p>
<p>1 1/2 lbs. white candy coating<br />
1 can (14 oz.) sweetened condensed milk<br />
Pinch of salt<br />
1tsp. vanilla<br />
1 1/2 cups gum drops, chopped*</p>
<p>Line a 9&#215;9 inch pan with foil. In a sauce pan, melt candy coating, milk and salt over low heat (or use a double boiler). Remove from heat and add the vanilla and gum drops. Spread into the 9 inch pan, cover and chill. Use the foil to lift the fudge from the pan and cut.</p>
<p>You can experiment with this recipe by using different kinds of candies or substituting chocolate candy for the white and 2 Tbsp. peanut butter or peanut butter chips instead of the gum drops.</p>
<p>*To make chopping easier, use a pair of kitchen shears dipped in warm water. This works great for cutting anything sticky like marshmallows and candy.</p>
<p>You can use just red and green gum drops or multi colored.</p>

<p><strong>Note: To speed things up in the morning, cook your sausage the night before</strong> and also mix your eggs, milk and salt the night before. Then you&#8217;ll only need to layer everything in the morning.&nbsp; </p>
<p><font size="3"><strong>Breakfast Brunch Casserole</strong></font></p>
<p>1 (8 oz.) can refrigerator crescent rolls <br />       1 lb. ground pork sausage<br />       1 cup cheddar cheese, grated<br />       1 cup mozzarella cheese, grated<br />       6 eggs, slightly beaten<br />       1 1/2 cups milk<br />       1/2 tsp. salt</p>
<p>Unroll rolls and press into the bottom of a greased 13&#215;9 pan, pressing perforations together. Bake at 375 degrees for 6 minutes. They will puff up. Remove from oven and turn down to 350 degrees.&nbsp;</p>

<p><strong>Today&#8217;s main dish recipe is a quick and easy one dish meal for these hectic days.</strong> Just mix it up, toss it in the oven and by the time you have your salad made and table set it will be ready. It&#8217;s also a great dish to make to use leftover potatoes and peas.</p>
<p><font size="3"><strong>*Sausage Stroganoff</strong></font></p>
<p>1 lb. bulk pork sausage<br />       1 cup onion, chopped<br />       2 1/2 oz. jar sliced mushrooms, undrained<br />       2 Tbsp. flour<br />       1 1/2 cups milk<br />       1 1/2 cups potatoes, cooked, cubed<br />       1 cup sour cream<br />       10 oz. can buttermilk biscuits<br />       1 cup peas, cooked</p>
<p>Heat oven to 375°. In a 10 inch oven proof skillet, brown sausage and onion, drain. Add mushrooms and flour. Over low heat, slowly add milk, stirring constantly. Add potatoes and heat till bubbly. Stir in sour cream. Arrange the 10 biscuits around the outer edge of the skillet and spoon the peas into the center. Bake for 15-20 minutes or until biscuits are golden. Serves 5-6.</p>

<p><strong>Use red and green M&amp;M&#8217;s on these bars to make a fun and different Christmas cookie.</strong> I haven&#8217;t tried it yet but in a pinch you could probably replace the first four ingredients with a brownie mix and just top with the marshmallows, M&amp;M&#8217;s and peanuts.</p>
<p><font size="3"><strong>*M&amp;M Marshmallow Bars</strong></font></p>
<p>1 (18 1/4 oz.) pkg. devil&#8217;s food cake mix<br />       1/4 cup butter or margarine, melted<br />       1/4 cup water<br />       1 egg<br />       3 cups miniature marshmallows<br />       1 cup plain M&amp;M&#8217;s<br />       1/2 cup peanuts</p>
<p>Combine dry cake mix, butter, water and egg and mix well. Press into a greased 13&#215;9 pan. Bake at 375° for 20-22 minutes until a toothpick inserted in center comes out clean. Sprinkle marshmallows, M&amp;M&#8217;s, and peanuts on top. Bake 2-3 minutes until marshmallows melt. Cool before cutting.</p>

<p><font size="3"><strong>Extra Holiday Recipe</strong></font></p>
<p><strong>In the following recipe, you can add red or green food coloring to tint for Christmas</strong> or add another food coloring to tint for any other holiday you want. You can also add 1/4 tsp. of peppermint extract if you like chocolate and peppermint flavors together.</p>
<p><font size="3"><strong>Cookies While You Sleep</strong></font></p>
<p>2 egg whites<br />       Pinch of salt<br />       1/4 tsp. cream of tartar<br />       2/3 cup sugar<br />       1 tsp. vanilla<br />       1 cup chopped pecans<br />       3/4 cup chocolate chips (optional)</p>
<p>Preheat oven to 350°. Beat egg whites until foamy; add salt and cream of tartar and beat until stiff. Very gradually add sugar, then vanilla and peppermint (if you are using it). Peaks should be shiny and stiff. Fold in nuts and chocolate chips. Drop by teaspoons on greased cookie sheet. Place in oven, turn off heat and leave oven closed until morning. NO PEEKING! or you will lose oven heat. Store in airtight containers.</p>
<p><strong>It might be fun to experiment with these cookies</strong> and replace the chocolate chips with peppermint, butterscotch chips, chopped maraschino cherries or different types of crushed candy.</p>

<p><strong>Make the meatballs from this next recipe and freeze them in a plastic bag.</strong> Lay the bag flat in the freezer to help make them freeze individually. They will keep for up to 3 months. They are so handy to keep on hand to take to a last minute activity, whether it is tailgating, a Christmas or New Year&#8217;s get together or as an appetizer for unexpected company.</p>
<p><font size="3"><strong>Christmas Meatballs</strong></font></p>
<p>2 lbs. ground beef<br />       1 pkg. Stove Top stuffing for chicken<br />       1 cup water<br />       2 eggs<br />       1 bottle barbecue sauce<br />       1 (16 oz.) can cranberry sauce</p>
<p>Line 2 &#8211; 15 x 10 x 1 pans with foil and spray with cooking spray. Mix first 4 ingredients. Shape into balls the size of walnuts and place on pans. Bake at 400° for 15-20 minutes until done. While they are baking, mix barbecue sauce and cranberry sauce in a large saucepan and bring to a boil, stirring occasionally. Add meatballs to sauce and coat evenly.</p>

<h1>Cheddar Turkey Bake</h1>
<p> 2 cups chicken broth<br />    2 cups water<br />    4tsp dried minced onion<br />    2 cups uncooked long grain rice<br />    2 cups frozen peas thawed<br />    4 cups cubed cooked turkey<br />    2 cans condensed cheddar cheese soup undiluted<br />    2 cups milk<br />    1 tsp salt<br />    2 cups finely crushed butter flavoured crackers<br />    6 tbsp butter, melted</p>
<p> In a large saucepan, bring the broth, water and onion to a boil. Reduce heat. Add rice. Cover and simmer for 15 minutes. Remove from the heat and fluff with a fork.</p>
<p>Divide rice between two greased 9&quot; square baking pans. Sprinkle each pan of rice with peas and turkey. In a bowl, combine the soup, milk and salt until smooth. Pour over turkey. Toss the cracker crumbs and butter and sprinkle over the top.</p>
<p>Cover and freeze one casserole for up to 3 months. Bake the second at 350 degrees for 35 minutes or until golden brown.</p>
<p>To use the frozen casserole, thaw in the fridge for 24 hours. Bake uncovered at 350 degrees for 45-50 minutes or until heated through.</p>

<p><strong>Turkey isn&#8217;t expensive at all so stock up now.</strong> I got two turkeys today for .39/lb. I had the butcher cut them in half just like last year and the year before! Tawra</p>
<p><strong>Thawing</strong></p>
<p> <strong>Sometimes turkeys do not cook properly because they don&#8217;t get thawed.</strong> You need to allow 1 day of thawing time for every 4 lbs. of turkey plus you can keep a thawed turkey in the fridge for at least 3-4 days. Thaw your turkey with the breast side down so the juices will run into the breast.</p>

<p><font size="3"><strong>Roast Turkey</strong></font> </p>
<p> 1 turkey, 20-22 lbs. <br />      1 stick margarine or butter</p>
<p> Defrost frozen turkey for several days in the refrigerator according to the directions on the package. Line a roasting pan with aluminum foil. Remove the insides of the turkey and save for giblet gravy or for fried livers and gizzards.</p>
<p> Lay turkey, <strong>breast side down</strong>, in the pan and place the stick of butter on the inside. Cover tightly with aluminum foil. Bake at 250° for 1 hour. Reduce heat to 200° and roast for 10-15 hours. Cooking time can be longer to fit your schedule. Test with a meat thermometer to make sure the temperature in the thigh is 180°.</p>
<p><strong>If I have a 20-22 lb. turkey,</strong> I put it in the oven one hour before I go to bed (that way I can turn it down to 200° and sometimes I go down to 180° before I go to bed.) It will be done by noon the next day. Because it is at such a low temperature, if you aren’t going to eat until 1-2 PM,&nbsp; it will stay just fine in the oven until then.</p>
<p> <strong>If I have a 10 lb. turkey,</strong> I put it in the oven early on Thanksgiving morning (about 6 or 7 AM in order to eat at noon. You don’t need to worry too much about it getting done. An hour or two before the meal, check it and see how it is doing. If it isn’t cooking quickly enough, you can always raise the temperature to 350°. With a 10 -12 lb turkey you only need to use half of a stick (about 4 Tbsp.) of butter. You can place it in a large crockpot on low, too.</p>
<p><strong>This is the best turkey you will ever eat. </strong>The meat will just fall off the bones so you will have to serve it already carved. It will be very juicy and moist.</p>

<p>1 can (46 oz.) pineapple juice<br />         3 cups lemon &#8211; lime soda<br />         3 cups orange drink<br />         2 liters ginger ale<br />         1/2 pkg. (half gallon) orange sherbet </p>
<p>Mix first three ingredients and chill. When ready to serve, pour in ginger ale and drop-in scoops of sherbet.</p>
<p>&nbsp;</p>
<p><font size="3"><strong>Jack O Lantern Juice</strong></font><br />         (This is a twist on the usual Orange Julius.)</p>
<p> 1 (14 oz.) can sweetened condensed milk (not evaporated) <br />         1 (46 oz.) can pineapple juice, chilled <br />         1 (2 liter) bottle orange soda, chilled<br />         Orange sherbet, optional </p>
<p> Mix all together in a large punch bowl. Top with a scoop of sherbet. Refrigerate leftovers.</p>
<p><strong>For a fast dessert </strong>or for those school treats your kids forgot to tell<strong> </strong>you about until the night before<strong>,</strong> grab your favorite brownie mix and bake it.</p>

<p> When brownies are cooled, cut with a large pumpkin cookie cutter. Then frost with orange butter cream frosting. If using canned frosting just add a little orange food coloring to vanilla. Decorate as much or as little as you like.</p>

<p>Hard boil eggs. Dye with orange food coloring:</p>

<li>Put a couple of teaspoons of vinegar in a mug and several drops of food coloring. Remember if you don&#8217;t have orange food coloring, red and yellow mixed make orange.</li>
<li>Fill mug with boiling water and place egg in mug. You can let the water cool slightly before putting the eggs in if kids are doing this.</li>
<li>Use black markers to decorate with faces and other fun designs!</li>
</ol>

<p> English muffins<br />         Spaghetti sauce<br />         Cheddar cheese, grated <br />         Black olives</p>

<p><strong>With football season here, this recipe will come in handy to serve not only for dinner but while watching the game.</strong></p>
<p><font size="3"><strong>Potato Flake Chicken Tenders</strong></font></p>
<p>1/2 cup vegetable oil for frying<br />          1 cup milk<br />          1 egg<br />          1 (7.6 oz) pkg instant garlic flavor potatoes<br />          2 tsp. salt<br />          1 tsp. pepper<br />          1 1/2 lbs. chicken tenders</p>
<p>While oil is heating in skillet on medium heat, beat egg and milk together in a bowl. On a piece of wax paper or a small plate, mix potatoes and seasonings. Dip chicken into milk mix; then roll in potato flakes. Fry 7-10 minutes, until golden. Drain on paper towels.</p>
<p><strong>Note: You can add some Parmesan cheese</strong> or other seasonings you might like to the potato flakes. You can use regular instant potatoes and just add garlic powder to season them.</p>
<p>&nbsp;</p>
<p><font size="3"><strong>Easy Vegetables</strong></font></p>
<p>Broccoli florets<br />          Cauliflower florets<br />          Green beans, with the ends trimmed<br />          Red Pepper, cut into strips<br />          Italian Dressing<br />          Parmesan cheese, shredded</p>
<p>Take any amount of first three vegetables you want and drop into boiling water for 2 minutes or until they are bright in color and still crisp. Do not overcook. Drain immediately and rinse in cold water. Drain well. Add pepper strips, cover and chill. Before serving toss with dressing and cheese.</p>

<p><strong>You can serve this pie with just whipped cream or you could leave out the nuts</strong> and top with lemon, blueberry, cherry or any other pie filling. You can also use Ritz, graham or saltine crackers in place of soda crackers or add chocolate chips. Someone suggested spreading it with jam and sprinkling with brown sugar. </p>
<p><font size="3"><strong>Soda Cracker Pie</strong></font></p>
<p>3&nbsp; egg whites<br />          1 cup sugar<br />          1/2 tsp. baking powder<br />          20 soda crackers, finely crushed<br />          2 tsp. vanilla<br />          1 cup pecans or nuts, chopped</p>
<p>Preheat oven to 325 degrees (165 degrees C). Beat egg whites to stiff peaks. Fold in all the rest of ingredients. Spoon into a greased 9 inch pie pan and bake 25-30 minutes. Cool.</p>
