Un-Muffins
1 pkg. muffin mix (banana, blueberry, apple etc.)
1/3 cup brown sugar
1 tsp. cinnamon

2-2 1/2 cups flour
1/2 cup milk

1/2 tsp. salt
1/4 cup water

2 Tbsp. sugar

Mom’s Sweet Muffins
1 ½ cups flour
1 ½ tsp. baking powder
½ cup sugar
½ tsp. salt
1 egg
½ cup vegetable oil
½ cup buttermilk
Mix all the ingredients in a bowl. The batter will be slightly lumpy. Place in greased muffin tins full and bake at 400° for 15-20 minutes. Makes 1 dozen.

Scrambled Eggs

Scrambled Eggs
8 eggs
1/4 tsp. pepper
4 Tbsp. milk or water (optional)
4 tsp. margarine or butter
1 tsp. salt
Stir all the ingredients except margarine in a bowl until well blended. Heat a skillet on medium heat. Add margarine. Pour egg mixture into skillet. Stir constantly about 4 minutes until eggs are fluffy and set. Serves 4.

Rice Cereal

Rice Cereal
2 cups leftover rice
2 cups milk
½ tsp. cinnamon
1 tsp. butter or margarine
2 Tbsp. sugar
Combine all the ingredients in a saucepan. Cook on medium heat until warmed but not boiling. You can adjust the cinnamon and sugar to your taste. This can also be microwaved very easily. Serves 4.

Pumpkin Pancakes
2 cups flour
2 Tbsp. brown sugar, packed
1 Tbsp. baking powder
1 1/4 tsp. pumpkin pie spice
1 tsp. salt

2 cups flour, all-purpose or wheat

Fried Potatoes
6 Tbsp. bacon grease or margarine
6 potatoes, sliced or cubed
salt and pepper
green onions, chopped (to taste, optional)
Melt bacon grease or margarine in a frying pan. Add the potatoes in the pan and cook over medium heat. Flip potatoes and cook until golden brown. Remove from pan. Salt and pepper to taste. Serves 4-6.
