Yankee Noodle

“Yankee Noodle”  (I learned this recipe in junior high.  It’s tasty, quick to cook, inexpensive, and dirties only one pan!)
1 lb. ground beef, lean
8 oz. noodles
1/2 large onion, chopped
1 lg. canned tomatoes
salt and pepper to taste

Brown meat and onion.  Drain off excess grease.  Add noodles and canned tomatoes.  Chop tomatoes a little bit while in the pan.  Bring to a boil.  Lower temp. and simmer covered for 7 minutes.  Stir, cover and simmer 8 more minutes.  That’s it!

You can add other ingredients you may have on hand such as, chopped green peppers, black olives, mushrooms, fresh herbs, etc.  And you may want to top with grated cheese.

(Never cook the noodles first.  They must cook with the rest of ingredients to absorb their flavors.)

Love, love, love recipes that take only one pan and better yet this one really does. So often they will call something a one dish meal and it my mind you use only one pan or dish but they end up using 3 pans, 2 mixing bowls and 1 casserole dish (that’s the one dish I guess) so now you can see why I appreciated your recipe. : )

Apple Barn Soup

You were looking for recipes for vegetables - the
easiest way I get my family to enjoy vegetables
is with soup. My favorite recipe (and absolute
easiest) is to dump 2 packages of frozen mixed
vegetables in my crock pot, add a package of
frozen southern style hashbrowns (or peeled and
chopped potatoes), any leftover meat you may have
(I usually leave the meat out and we have a
vegetarian soup night), and then dump in 1 large
bottle of V-8 type juice - we love to use the hot
and spicy variety, if you like a bit more flavor
you can add a package of onion soup mix.

I put this in the crock pot first thing in the morning
on low and let it cook all day. The kids love it
and it is cheap!! I can get all of the
ingredients at the dollar store in our town. If
you can’t find the hot and spicy v-8 juice, just
add Tabasco or hot sauce to taste. Hope this
helps!!! I serve this with crackers if I am
really tired, or a pan of cornbread if I feel
like making it. My family doesn’t even realize
they are eating a meatless meal when I fix it.
They call it “Apple Barn Soup.” because it
reminds them of a vegetable soup served at the
Apple Barn restaurant in Knoxville, Tennessee.
