Popcorn Balls and Peanut Caramel Popcorn
Popcorn Balls
40 large marshmallows
1/4 cup butter
food coloring (optional)
8 - 10 cups popped popcorn, old maids and hulls removed
Melt marshmallows and butter over low heat. Add food coloring and mix well. Pour popped corn in a large bowl. Place marshmallow mixture over popcorn while stirring. Mix well to coat all of the popped corn. Butter your hands to form the popcorn mixture into balls. Makes 8-10 popcorn balls.
Peanut Caramel Popcorn
(just like Cracker Jacks)
1 cup margarine
2 cups brown sugar
1/2 cup light or dark corn syrup
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
1/2-1 cup peanuts
6 qts. popped corn
Melt margarine in large saucepan. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 minutes. Remove from heat. Stir in baking soda and vanilla. Gradually pour over popped corn and peanuts. Mix until coated. Makes 6 quarts.
