Meatballs and Mushroom Gravy

Roxie sent me this recipe. I haven't tried it yet but it sounds yummy! Tawra

Meatballs and Mushroom Gravy

any basic meatball recipe will do, but I make mine with
1 pound ground beef, 1/4 cup bread crumbs (dry) 1 egg beaten, 2 tbs finely chopped onion, 1/4 tsp salt and 1/4 tsp pepper. Mix all together and form into small balls about 1 1/2 inches each. (I form mine in a teaspoon) and bake at 400 for 10 -13 minutes. This makes about 40 meat balls.
When they are cooked I take one can of cream of mushroom soup and 1 can of milk. I whisk these together and pour over the meat balls. I then bake this for about an hour at 300. I serve over mashed potatoes.

I have also made this with cheddar cheese soup. Just as good, only a different taste.

Also, I am looking for a recipe that makes a meatloaf using quick oats. I had one once and lost it.

That sounds like my mom's recipe. We used to eat ours over rice, which was also very good!

Also, here is a healthy meatloaf that can use the quick oats.

Mighty Meatloaf:

2 lbs. ground beef
2 eggs
1 onion
1 Tbsp. dried parsley
1/4 c. bread crumbs or wheat germ or quick oats
1/2 tsp.salt
1/4 c. milk
3-4 large carrots, sliced
2 medium zucchini, sliced

OPTIONAL: 2 yellow squash, 1 small eggplant 1 c. chopped green beans, and/or 1 c. chopped celery

SAUCE:

2 green bell pepper (thin strips)
8 oz. mushrooms, sliced
2Tbsp. oil
3 1/2 c. tomato puree

Mix first 7 ingredients in bowl. Press thin layer of mixtrure into 10x10 inch baking pan or 2 loaf pans. Cover meat with carrots. Add another layer of meat and layer of zucchini. Alternate layers of meat and choice of optional veggies, using one kind of veggie at a time. End with meat. Bake at 350* for 1 to 1 1/2 hrs.

Saute' green peppers and mushrooms in oil in skillet. Add tomato puree. Simmer 15 min. Serve with meat loaf.

(I don't slice my veggies--I chop them and add them into the meatloaf. If my children knew what was in there, they'd never eat it!!)

You're welcome. I must confess that I "stole" it from my Whole Foods for the Whole Family cookbook!!

I like sneaking the veggies in without anyone knowing they're in there!
